Bai Pi Suan-Culinary
The geographical origins of this rare purple stripe variety are disputed, although it likely comes to us from Xinjiang, the northwestern-most province of China. While its history may be lost to us, its delicious flavor is not. Bai Pi Suan has a full-bodied, rich flavor with a touch of spice and medium heat. The purple-tinged skin is easily-peeled, and each bulb is packed tight with large cloves brimming with a flavor that will complement nearly any of your dishes.
